Ingredients

muffin

  • 1 whole egg
  • 2 tablespoons coconut milk
  • 2 teaspoons coconut oil- Buy Here
  • 1 teaspoon vanilla extract- Buy Here
  • 10-15 drops stevia liquid- Buy Here or 1 tablespoon maple syrup or honey
  • 2 1/2 tablespoon coconut flour- Buy Here
  • 1/4 teaspoon baking soda
  • dash of sea salt- Buy Here

toppings

  • 1/4 cup fresh strawberries
  • 2 tablespoons whipped cream or whipped coconut cream

Instructions

  • Whisk the egg with the coconut milk, coconut oil, vanilla, and stevia or maple syrup.
  • Add the coconut flour, baking soda, and salt. Mix well.
  • Transfer it to a ramekin or mug.
  • Microwave on HIGH (100 per- cent power) for 90 seconds. Cool. Or cook in a toaster oven on 350 degrees for 30 minutes.
  • Top with strawberries and whipped cream or coconut cream.
