Paleo Apple Streusel Donuts

Apple season has come once again, Yipee! These paleo apple streusel donuts are warm and sweet, the perfect way to use any extra apples hanging around your kitchen. Made with almond flour, these are the perfect gluten free donuts to munch on.

Ingredients

Donuts

  • 1 cup almond flour
  • 2 tablespoons arrowroot flour you can also substitute with tapioca flour
  • 1 tablespoon coconut flour
  • 1/4 cup coconut sugar
  • 1 1/2 teaspoons cinnamon
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon himalayan pink salt
  • 1/2 cup almond butter
  • 1/4 cup applesauce
  • 2 eggs
  • 1 cup diced apples

Streusel Topping

  • 1/4 cup coconut sugar you can use brown sugar as well
  • 3 tablespoons almond flour
  • 1 tablespoon tapioca flour
  • 1 1/2 tablespoon cinnamon

Glaze

  • 1/2 cup coconut butter
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract

Instructions

Donuts

  • Preheat oven to 350 F
  • Combine all ingredients for the streusel topping in a small bowl and set aside.
  • Slice apples for the donuts into small ¼” size pieces and set aside.
  • For the donuts, combine all the dry ingredients in a medium bowl. Add wet ingredients (leave out apple pieces) and mix until just combined- do not over mix. Fold in apple pieces until combined.
  • Generously grease the donut pan with spray coconut oil to prevent sticking to the pan. Fill the donut pan with batter ¾ the way up and sprinkle topping evenly over donuts. Bake for 12 minutes or until a toothpick comes out clean.

Frosting

  • Combine all ingredients for the frosting in a food processor and blend until smooth.
  • Once the donuts have cooled pipe frosting over the donuts using a piping or ziplock bag.
