Coconut Yogurt Pumpkin Chia Cereal

Thick and creamy coconut yogurt pumpkin chia breakfast cereal. Easy paleo breakfast idea! A bowl full of creamy pumpkin spice pudding, topped with roasted sweet potatoes and nut butter!

Ingredients

  • 1 cup coconut yogurt Coyo brand is best!
  • 1/2 cup pumpkin puree
  • 1/4 cup chia seeds
  • 2-3 tablespoons date syrup or other sweetener
  • 2 tablespoons collagen peptides or other protein powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice

Instructions

  • Use a hand immersion blender to blend all ingredients for the pudding until combined. Then chill in the fridge overnight and serve.
  • Optional toppings (my favorite!): roasted squash or sweet potatos (bake on 450F with avocado oil for 20-30 minutes), nut butter, granola, cacao nibs, and almond milk. So yummy!
