Ingredients

Salad

  • 2 cups cauliflower rice
  • 1 cup cherry tomatoes sliced
  • 1/2 cup cilantro chopped
  • 1 cup spinach
  • 1/2 red bell pepper chopped
  • 1/4 red onion minced

Dressing

  • 1 large avocado pitted and peeled
  • 1/2 cup cilantro
  • lemon or lime juice from 1 fruit
  • 1/4 cup olive oil
  • 1/4 cup water
  • 1 large garlic clove
  • 1/2 teaspoon sea salt or to taste

Instructions

  • Blend ingredients for sauce in a food process or blender until smooth.
  • Add ingredients for salad into a large bowl and stir together with dressing. Optional: serve with grilled chicken breast for extra protein.

    That avocado dressing looks so so so good! I love light salads in the summer and I often make tabbouleh with cauliflower rice, so I’m looking forward to testing this recipe and trying out your avocado dressing. Thanks for sharing!

    well it looks very good, but i made it with pre naught minced garlic and cilantro because i didn’t have any fresh. It tastes ok but turned out really salty. I’m not sure what happened. Any suggestions besides using fresh garlic?
