Healthy Paleo Pumpkin Pie Donuts

Easy paleo pumpkin spice glazed donuts made with white sweet potato. A healthy donut recipe that tastes like the real deal! Perfect donut recipe for fall celebrations!

Ingredients

Donuts

  • 1 small white sweet potato raw (or regular sweet potato)
  • 1/4 cup coconut flour
  • 1/4 cup coconut sugar
  • 2 tablespoons arrowroot flour
  • 2 tablespoons maple syrup
  • 2 tablespoons coconut oil
  • 2 tablespoons water optional: to thin the batter, if your is too thick
  • 2 large eggs
  • 1 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda

Glaze

  • 1/2 cup coconut butter coconut manna
  • 1/4 cup maple syrup
  • 2-3 tablespoons boiling water
  • 1/8 teaspoon ground nutmeg
  • dash of pumpkin pie spice
  • pinch of sea salt

Instructions

  • Preheat oven to 350F. Generously grease a donut pan with coconut oil.
  • Dice sweet potato into chunks and mince in a food processor. Add rest of ingredients for donuts and blend until smooth.
  • Scoop batter into a piping bag or plastic bag and fill donut pan with batter. Bake on 350F for 30 minutes then cool before gently scooping donuts out with a spoon.
  • Bring coconut butter to room temp, until it's drizzly and liquidy- you can do this by putting the jar into a bowl of hot water until it melts. In a bowl blend ingredients together with a spatula until smooth.
  • Set donuts on a cooling rack and pour glaze over.

      Hi Emily, coconut flour is best because it absorbs liquid, which is needed in this recipe. I’m not sure what the conversions wold be with another flour unless I tried it. Sorry!

    My batter wouldn’t go smooth, even in my Vitamix, and I blended it for 10 min! Still chunky lol, not enough liquid to blend smooth it seems… Does yours actually go smooth?

    I just popped these donuts in the oven and I noticed in the video you mention to add 2 TBS of cold water to the batter but in the written recipe you didn’t mention it! I did add it however I found the batter to be pretty water-y.

    How small of a sweet potato? I mean, they really vary in size and maybe my small is not your small. So could you give an idea of how many cups when chopped, or size in ounces or something? I would really like to try your recipe, but I need a little more clarification please. (and thanks)

    Sounds great what you don’t explain it the potato is to be cooked or if it’s raw…….. it seems quite hard to mince a Rob potato?…… not yeah and the ingredients just says “potato”.

    Just like somebody else asked- in your video it says adding 2 Tbsp of water but not in written directions — add the water or leave out? Sound amazing Thanks.

      Hi Abbe, I updated it with more clarity- hope that helps. The water is really optional depending on what size sweet potato you used. If your dough it too thick then you can add the water and if it’s just right, then go ahead and bake. 🙂
