Trending or not, these broccoli falafel will be trending as soon as you take a bite. Falafels are my go-to easy blender recipe that I mix and match to compliment my mood. Feeling a little green, eh? Um, no, I just REALLY like veggies in my falafel! 🙂

The best way to squeeze your veggies into meal time: falafel. More and MORE delicious, scrumptious, want-to-go-back-for-more, falafel. And the stunner part is- it’s made in 5 minutes in the blender or food processor (this is the one I recommend)! Like, can we get any easier over here people? Nope. Nope nope, not at all.

So, if you’re like me, you probably looove saucy things all over your falafel. Try paring this blender broccoli falafel with my favorite homemade ranch dressing or lemon tahini drizzle and your mind will go wild with flavor and love.

Okay, so all you really need is a food processor (or blender) and a handful of spare minutes that can be turned into falafel for dinner. My favorite way to get the falafel in the oven: flick on my favorite 90’s TV show or turn up the tunes and crank it out in minutes! Or you can cook in silence, I get it.

If you aren’t in love with beans and want to try a grain free/legume free version of falafel- this is it. Try and be amazed. Another favorite is swapping broccoli for cauliflower, like in my uber popular recipe for cauliflower falafel. That being said, you can really go crazy and choose whichever veggie fits your fancy.

5 Minute Spicy Jalapeño Broccoli Falafel

Total Time: 25 minutes

Ingredients

  • 3 cups broccoli rice I get mine from Trader Joes
  • 1/4 cup ground cumin
  • 1 small/medium jalapeño pepper
  • 2 medium cloves garlic
  • 1/2 teaspoon sea salt
  • 1 cup fresh cilantro leaves
  • 2 tablespoons cassava flour
  • 2 tablespoons olive oil for cooking

Instructions

  • Preheat oven to 350F. Line a baking tray with parchment paper.
  • In a food processor combine all ingredients for falafel (except oil). You may need to add 1-2 tablespoons water or olive oil to the mix if you mixture is crumbling. Use a small ice-cream scoop and form 13 falafel balls. I use broccoli rice from Trader Joe's- you can make it at home too by mincing broccoli. Fresh of frozen broccoli rice works.
  • Pour 2 tablespoons olive oil on a baking tray lined with parchment paper and set the falafel balls on the tray. Gently rolling them in olive oil on all sides, then bake on 350F for 20 minutes until golden. Remove and serve with any of the sauces in recipe notes.

Notes

Serve falafel with any of these sauces and a side of carrot or sweet potato fries (make fries here).

    Going to try a bunch of your recipes, thanks for sharing them! Can you confirm it is ¼ cup cumin in the falafel? (Thats a whole jar!?)
